Flash Freezing Fruit

FLASH FREEZING FRUIT

Ok so Fruits and Vegies cost a fortune!  One way I get around that is in the summer when everything is in season I buy it and freeze it it for the winter when its not such a good price.  This helps with the monotony of just Broccoli & Bananas for the winter (which is always cheap) For Berries and Grapes you can flash freeze them and they will keep for a year. This is great for shakes, pies or snacking How to do this.



Rinse your Berries and drain and dry on towels.  Once they are completely dry *must be dry or they will stick to the pan, then put them on a cookie sheet pan and put them in the freezer (level spot) for an hour.  Take them out and bag them, in a freezer bag. Get as much air as you can out of the bag (I suck out the air in one corner of it.  Then put that bag in another bag.  I just get a big gallon sz bag and put my berries in it each time I freeze a batch.  So when Blueberries are $1.49 per pint I buy 2.  1 to eat fresh and 1 to freeze for the winter.  This is a great way to save on your cost's in the winter.





Note for Strawberries I suggest cutting them before freezing as "whole" frozen strawberries don't "blend" well for smoothies.  Also for soft fruits like Peaches if you freeze them with some brown sugar & cinnamon & nutmeg (or allspice) it can be great for pies way better then canned peaches!

Vegies you don't flash freeze but blanch and then cool before freezing.  Blanching you put the vegie in hot boiling water for 3-4 min.  Then cool under cold water and chop up to your liking.  Like Zucchini bread?  I shave my extra Zucchini and put it in a freezer bag for bread in the winter time too.  You can make your own fries and freeze them too, when you get those big bags of potatoes.  Dont throw those onions about to sprout away!  chop them into 1/4cup, 1/2cup, 3/4 cup or cup sizes for recipes.  (It's so nice to just cry once when chopping them instead of a bunch of times)
